Hummus
Prep time: 10 mins
Makes: approx. 2 cups
Ingredients
- 400g can chickpeas, rinsed & drained
- 2 tbsp tahini
- 1 small clove garlic, peeled
- ¼ cup lemon juice
- 1 tbsp extra virgin olive oil
- 1-2 tbsp water
Method
- Place all ingredients in a blender or food processor and blend until smooth. Serve with Vita-Weat or Cruskits.
Sweet Potato Hummus
Prep time: 10 mins
Makes: approx. 2 cups
Ingredients
- ⅔ cup hummus (recipe above)
- 1 cup cooked sweet potato, mashed
Method
- Combine hummus and sweet potato in a medium bowl. Stir well until combined. Serve with Vita-Weat or Cruskits.
Whipped Feta
Prep time: 10 mins
Makes: approx. 2 cups
Ingredients
- 250g block feta cheese
- ¾ cup reduced fat plain Greek-style yoghurt
- Black pepper, to taste
Method
Place all ingredients in a blender or food processor and pulse until combined. Season with black pepper and serve with Vita-Weat or Cruskits.
